Steak

I’ve had a craving for a good steak all day. Picked up some USDA Choice NY strips on the way home and cooked them in a hot cast iron with some butter and seasoning. Turned out great. What’s everyone’s favorite cut of steak and how do you prepare it?

We prefer chicken! I have 63 recipes for it and I eat it 17 times a year. The fun part is wringing their neck.

I go with Filet or NY Strip. I usually look for 1-1 1/2" thick.
- Remove and let sit to Room temp - Prep with olive oil, Sea salt & Pepper - Drop into a hot cast Iron pan & Cook 2 min on each side - Then, drop in a few knobs of butter, crushed garlic and Thyme. - Cook on each side for 1 - 1 1/2 more min on each side while continuing to brush with butter, garlic and thyme. - Pull the steaks out, let them rest for 5 min before cutting

I like a good T-Bone. I used to eat a 12 - 16 oz. steak and all the sides I could get on a plate. Now, a 6 oz. steak and a small baked and loaded potato is about all I can handle. If it's a good steak, I don't want anything on it.
A friend of mine, when asked how he wanted his steak, always responded, "big and often".

Ribeye for me and I try to find prime steak. Bone in ribeye preferred. Costco carries prime steaks and some better butcher shops also. Bring to room temperature, brush with olive oil and add salt and pepper to each side. Cook on the big green egg at 400F until medium to medium rare.
I also sometimes use a sear roast method in a cast iron skillet. Get the skillet hot on the stovetop, sear one side 2-3 minutes, then flip and put the skillet and steak in an oven preheated to 300F. Google Omaha Steaks Sear Roasting Chart and it will tell you how long to leave in depending on degree of doneness and thickness of steak. For example, for a 2" thick medium rare steak, leave in the 300F oven for 20-22 minutes. This seems like a long time, but it comes out perfect. I'm not a big Omaha Steaks fan, but their method works..

That actually happened to me once lol. Was at a bar where you can take your dogs and our food came, and before I could grab my fork a big lab ran by, jumped up, and swiped my food in one bite and ran off.

NY Strip. Reverse sear/roast method on grill with butter and touch of bacon fat. Warmed to room temp before the grill and rubbed with coffee-based dry rub. Yukon Gold mashed potatoes and a nice bourbon to finish it off!

Everybody like their own way, but mine involves smoking steak (ribeye, filet mignon, or the entire beef tenderloin)using different hardwoods (i.e. oak, pecan, hickory, mesquite, cherry)depending on what kind of flavor profile I'm looking for. I know some people flash grill 'em hot and fast.....some use cast iron, to each is own. But give this a try and you'll never cook a steak a different way. I haven't "grilled" a steak in about 4 years now. "Smoke 'em if ya got 'em!!!!!"
GO TIGERS!!!!!

Ribeye grilled. Tenderized. Different seasonings each time I guess. Add a little sauce and let sit for about an hour at room temp. Add asparagus, corn and/or grilled potatoes with onion, mushrooms and cheese.

My wonderful wife bought me a camp chef smoker for my birthday.
I've been smoking my steaks, pulling them off and letting them rest and then putting them on regular gas grill to reverse sear them.
Yum.
