winged it and it was the best out of the three, so of course I don't remember exactly what I did.
For this one, I went off of this:

Removing the backbone basically flattens the chicken and helps it roast faster and the result is a juicy chicken with crispy skin. This recipe is loaded with Greek flavors like lemon and oregano and is simply delicious.
I used equal parts olive oil and lemon juice, and added a little bit of store bought greek seasoning on top right before I put it in the oven. I dragged the potato wedges through the marinade as well, so I had to make extra. 1/2 cup oil, 1/2 cup juice and had some left over so will go with 1/3 cup next time.

The lemon slices don't really add anything to the dish. They don't add any flavor that I can tell, and actually keep the skin wet so that it doesn't dry out and crisp up. I will be leaving them off next time.

have you tried mixing melted butter and lemon juice and liberally basting chicken with it? I think it actually gets more lemon flavor into chicken and allows skin to get crispy-ish.
What seasoning did you use? Cavender's is my go-to for anything greek-like. They make a salt-free one now that's pretty good too.

that the lemon slices don’t really help and actually keep the skin too moist. I will try the butter next time. It was Cavender’s that I used.
