Mahi in a bourbon marinade then grilled over charcoal or lump coal with wet cherry wood chips to give a mild smoke flavor.

Love both but I think mahi is more forgiving and better in multiple recipes. Grilled wahoo is excellent but mahi is excellent every way!

Fast is 6 - 7 knots!! Seems like the Wahoo like a faster bait, but it didn’t stop us from trying!

Fresh grilled or fried Mahi is great, but easy to get tired of b/c it’s the most plentiful and easiest to catch. Wahoo is great too but harder to cook. Easy to overcook. We mainly eat our wahoo raw as sushi or make poke and do bowls. Raw wahoo is better than tuna for me. Both fish are excellent. We’re lucky to live where both are so readily avail. I also concur on the triggers. Excellent!

Wahoo is my favorite. One of the best prepared fish was a freshly speared Spanish Hog Fish in a little town north of Akumal in the Yucatan. The restaurant consisted of the porch of a house and a kitchen with a 4 burner stove with oven and a large refrigerated cooler with sliding tops you picked your fish from. It was baked in the oven with tomatoes, onions, plantains peppers and wine. It was outstanding! We were probably starved from cave diving all day but that doesn't take away from that fish!
