You can't say "Team A got farther in the tournament thus they are a better team" because "better" is an entirely subjective term.
But, a playoff gives the best chance of providing an objective path to determining a true champion.
You remove (or at least greatly reduce) the opinion-factor.
I'd argue that the only real way to determine a champion in any sport (or at least any sport where every team does not play every other team) is a playoff.

Playoff. No one ever says that the (pick your year) Super Bowl Champ isn't the champ. They may not be the best team but in the weeks leading up to the title team X got the job done vs. the best competition.

The problem isn´t switching to a playoff. It´s the logical fallacy of saying that a playoff is a fair way to determine who the champion is. Do a playoff, that´s fine. But a playoff will determine the champion of a system in which the champion is determined by a playoff. It´ll be exciting and fun but it isn´t any more or less ¨fair¨ than another system.

The Giants weren't close to the best team that year. They happened to get lucky on the night they played the Patriots. Over the course of the entire year, the Patriots were BY FAR the best team in the NFL.
The people who don't want a playoff mainly don't want undeserving teams getting an opportunity to win it all. The 2007 NFL playoffs are a prime example of this.

It seemed a little odd to me that the selection committee would take the three best teams in South Carolina and put them in the same regional. Was the idea to be sure only one of them could advance?

It is undeniably true that the best team does not always win; but it is even more true that popular opinion is a much less objective, much worse way of determining who's best.
If I say I can whip your a$$, and you say you can whip mine, and we really wanted to find out, would we ask a bunch of biased people to vote on it, or would we just fight and see who wins? (Personally, I'd be happy with taking a vote, but you get the point ).
As long as biased opinion is rewarded over performance and results, what is the purpose of even competing?
