The beauty of pellet cooking

I came home at lunch and put this rib in pork loin straight from the freezer into a 130 deg water bath. Got home 1/2 an hour ago and moved it to the smoke for an hour and a half while I unwind and get the baked tater and broccoli ready.
Boom — tender smoked pork on a weeknight.

I like that Scott's BBQ vinegar sauce you can buy. It costs basically nothing, but it is so good. Have you tried?

I’m not big on sauce except on chicken and vinegar isn’t the best for that

I have this Aunt who gives odd presents. She just gave me a $1500 gift card for Whole Foods. I am going to buy some random things like possibly that. That is if they have it. Might as well wing it on some stuff. I hate to take to chances I think might let me down, but I will on a few things this weekend.

I think the latest target for pork is 145. Should still have some color inside. But that looks super juicy.
