Grilling wings with 'Slap Your Mamma' Cajun seasoning is good. They have an extra hot if you can handle some heat :)

Season. Bake low and slow on a wire rack at 275-300 for about 35-40 minutes

Then finish them on the grill to get a good char.

The texture of grilled wings is often very tough and the fat doesn't render out, so it's a little simply and chewy for my liking. The rub, bake, grill method works wonders for me.

For grilling, I have a way where I bake then grill

So I bake them on 250F for about 20 minutes. During this time the gill is heating up. After baking, I put them on the grill to finish them. The skin gets crispy and the fat protects the meat from drying out. Grill time varies on multiple things like gas, charcoal, wood pellets, weather, etc...It's been awhile since my last time, but maybe 15 minutes, fat side down, grill covered. I use a Weber charcoal grill and switch between hickory, mesquite, apple, pecan, and cherry chips for the smoke.

I have pretty much the same method but bake a little hotter for longer. I hate a fatty, chewy wing and cook the heck out of it before I throw it on the grill
