Holy BBQ sauce, Batman!

I have heard about "The Smokin' Pig" BBQ near Clemson for years, but never checked it out. I go on Ye Old Interwebs, and find out there are FOUR of them now. But, upon venturing to their website, talk about sticker shock! Higher prices than my local BBQ houses, but, if you read below, easy to see why.
First surprise, they have no Hash and Rice on their menu. There are 3 different BBQ houses here locally in Orangeburg, and they all have that. Now, obviously my idea of a "traditional" BBQ house must differ from most these days.
My idea of a well stocked "BBQ house" is, Hash and Rice, Pulled pork, (maybe a choice between sauced and non-sauced, or the sauce will be separate, in "Hot" and "Mild" varieties of Mustard based, keep that vinegar stuff away from me). Other menu items like green beans, macaroni, possibly fried and BBQ Chicken. Baked Beans also as a side item. And, although I never touch the stuff, cole slaw is a "standard." (I make it a point not to eat anything that looks like it has already been eaten and regurgitated multiple times, yuck!) So are sweet and sour pickles, and sliced bread is available if you want some.
Desserts will be something like a peach or apple cobbler, with different cakes as a backup.
Drinks will be Sweet Tea, or if you want it, Unsweetened Tea (although I consider that an abomination to God and Man.)
Now, the Smokin' Pigs seem to prominently feature BBQ ribs, and brisket, which to me, with the absence of Hash and Rice, makes them a RIB house.
I realize it's all semantics, and I do still plan to check them out at some point in the future. But, I sure would have been disappointed walking in the door and expecting MY idea of a traditional BBQ house!
See, the Interwebs CAN be a source of useful information at times.

I agree with you on the hash and rice needing to be served at a BBQ place. I also grew up in the South Carolina low country (Hampton) and most if not all BBQ places had what you described.
Still visit Duke's BBQ in Bamberg and Walterboro to get that awesome buffet when we are in the area.
The new Home Team BBQ place in Greenville serves hash and rice that is quite tasty. Hopefully when Lewis BBQ opens in Greenville soon, it will also serve hash and rice.

house in Bowman, SC called A.L. Felder's BBQ. His hash was much darker and more "livery" tasting than any others I know of. He used some darker seasoning on his pulled pork as well, which was superb.
Sadly, this is just another one of those "You can never go home again" deals that makes getting older suck lemons. Mr. Felder retired many years ago, and no one wanted to take his BBQ over, so it closed.
ps, I have eaten at the Dukes BBQ in Bamberg on several occasions. It is pretty good, as well.
Not all BBQ is created equal, that's for sure. I lived and worked in the Charleston / Summerville area for a five year stretch 1977-82. I ate, ONCE at a BBQ place in Summerville, I think it was called "Droze" BBQ? To be polite, it was God Awful.

Orangeburg BBQ is the real deal. Gotta have rice and hash or it is just like you said....Rib house BBQ. Dukes by the old Pepsi plant was great when we were there for Easter.

In 1978 I was working at Winn-Dixie on Russel Street and was introduced to Dukes...$5 all you can eat. I had never eaten BBQ before so it will always be my favorite. When I ran the Winn-Dixie at the mall I still went to the Pepsi plant. The one by the firehouse is OK but it is definitely a toss up with Antleys and Dukes.

You are right about Felders BBQ in Bowman. I am from Bowman and the only BBQ that I have found better in SC was Sweatmans BBQ in Eutawville SC, near Holly Hill.

owner, Mr. Harold "Bub" Sweatman, died back in 2005. The place is still open, under different owners, and the menu has changed. I only ate there once in it's current "incarnation". It was ok, but not the same at all as what "Mr. Bub" put out.

Town seems to have died over the years as did all my family that lived there. But that stuff was good. Even took my wife there around cousins wedding years ago and she loved it. She’s from Arkansas and a different type of bbq around here

to drag me over to Blackville years ago to play a nine hole golf course they had over there. He was a lefty, and was just starting out playing golf. He had a weak grip, a HORRIBLE old set of worn out "First Flight" brand golf clubs, and was shooting about 95. Even the GRIPS on his clubs were worn slick.
At this point in time, I was truly a Happy Hooker, shooting in the mid 70's to low 80's every time out. I told him he HAD to get some decent clubs pronto, if he ever wanted to improve. So, he went out and found a used set of the original S2H2 Callaway irons, and actually had some "custom" knockoff woods made to fit him. I made him strengthen his grip, and showed him how to properly rotate his body to get his legs AND torso into the swing. Oh.My.God.
I created a monster. He got to where he was swinging it so well, and hitting it so hard, he had to get another set of irons, because he was constantly bending the shafts or either snapping them off at the hosel in those "short hosel" S2H2 irons. I would have sworn he was just pounding them into the ground and snapping them in frustration if I had not personally been playing with him and seen what actually was happening. Did I mention this guy was about 6'4" / 220 lbs?
By the time I had to quit playing with him, because my game had gone to the point I couldn't play money games anymore, he was a threat to shoot around par every time out. He was the only real "student" I ever coached at any sort of game. I can see how coaching could get in your blood, though, just from the satisfaction I got watching that big galute smash golf courses.

Take all the crap from a pig you don't want to eat, grind it, dump it in a pot, cook for 8 hours and dump on overcooked rice. I go to Hite's here in Columbia and the woman looks at me like I have 3 heads when I never get the hash. I just tell her I'm from up north and she just replies, "well bless your heart".
It's been a while since I have been to Smokin Pig. I can get all the pulled pork and ribs from Hite's. I just wish their ribs were more consistent in size. However, the taste and quality is as good as it gets.
If you want brisket go out west. Just like bread taste's better in the north of the Mason-Dixon line, the best brisket is west of the Mississippi. Pork ribs are pretty much good all over depending on your personal taste.

in taste, depending on the amount and type of "seasonings" added when making it. Most are "middle of the road" average, a few are exceptional, and some others are just plain turribel.
I think the reason a lot of BBQ houses don't offer it is, it is probably the hardest thing to get "right". Because, "right" is so subjective in this case.

in the distinct differences depending on who cooks it. For hash you want the flavor of the organ meat but you don't want to be overwhelmed by it. To me both Hash and Brunswick stew are NOT the reasons I go to a BBQ place. Sides are just a very short interlude between bites of smoked meat....

Clemson memory. Those of us who attended Clemson back in the mid 70's can well recall Harcombe Commons food, specifically the "cardboard" tasting hamburgers.
Us Chem E students had a yearly cookout at the "Y" beach back then, Juniors and Seniors. We had "inter-class" sporting events, mostly softball, etc, with of course copious amounts of beer.
The memory is this: We had hamburgers for that cookout, they were cooked in an open "ground pit" over charcoal/ hickory wood? They tasted REALLY good. I was incredulous when I asked where they got them, and the cooks said that they had bought the raw hamburger patties from HARCOMBE!
Just goes to show, HOW something is cooked is just as important as WHAT is being cooked.

What you describe Tigerfann is not hash to me but Brunswick stew. Georgia hash is chopped stew and I hate it.
Real hash is hams and/or shoulders, or maybe Boston butts if you are doing small batches cooked until they fall apart. All fat removed, then pulled into individual strings of meat. Returned to a pot and simmered for hours with salt, pepper, vinegar, dry mustard, butter, and onions. Season to taste as you cook. Some like to add yellow prepared mustard. Takes either all night or all day, sometimes most of both to get it right.

I agree with your sentiments and I know that I am going to #### off a few on here but hash and rice at a BBQ place is equivalent to getting jambalaya or beans and rice at a Calabash "All that you can eat" Seafood restaurant. First of all, if crab legs, shrimp, oysters, fresh caught fish, etc are on the menu then why would I want to get a "filler" in rice and canned, sliced tomatoes? If Ribs, pulled pork, brisket, etc is on the menu then why would I want to get another "filler" in rice and pork entrails?
Is hash and rice better than Spam or minced pie? Yes - Not by much.
Folks, if you can't see the smoke ring and the juices oozing out of the meat then it is not BBQ. If you have to hide the flavor with a BBQ sauce then it is not BBQ.

Smokin Pig is more of a smokehouse BBQ joint (probably same as you are referring to as, Rib House ,. has deep smoke flavor). Only thing I do not like from there, is they do not serve smoked chicken halves or Quarters. When referring to hash coming from Orangeburg I hope you are not referring to liver hash. I see a lot of that as you heading from the pee dee to the low country, its just gross!!

I agree. Liver hash is bitter and taste bad. The hash I get is made from a Boston butt and is delicious. But if you were raised eating liver hash, that is what you usually prefer. We have both where I live.

No, Thank God! but I got fooled one time in the low country thinking it was regular hash on the buffet. I grew up on firehouse hash(Fire House used to make it and sell it twice a year) still cannot find that kind of hash anywhere. It was pure cooked down meat with a hint of smoked flavor, also with a lot of pepper and a little bit of stewed onions but not runny.

as you can attest if you’ve seen pictures of me posted before . . . I’ve never met a “hash and rice” dish I didn’t like, but the very best I’ve eaten was once served annually at the Antioch Presbyterian Church “In Gathering” located just outside of Raeford, NC . . .
As for Mustard Base Sauces . . . I can enjoy them and the Smokin’ Pig has a good one . . . but the German blood in me leans towards the vinegar side of life . . .
I like the “Pig” because they serve the sauces on the side and the pork is pulled, not chopped . . . I do wish they had hash!!!
Side Note: didn’t I read here in years past that the “Pig” sold over 10,000 pounds of bbq on a Clemson Football Game Day?!!! That’s a lot of BUTTS . . . “The Best Butts in Town”!!!

Just kidding. And, although if you put me on a witness stand I would deny it, I HAVE on the RARE occasion eaten some vinegar based BBQ that was pretty good. But, unfortunately, at least around here, most vinegar based BBQ just tastes like vinegar, period. There is SO MUCH vinegar that it overpowers everything. Don't think that is what good vinegar based BBQ makers had in mind.
BTW, a useless factoid from my Chemical Engineering career. Vinegar is ~5% acetic acid in water. Did you know, your nose can smell acetic acid (which is what you are smelling when you smell vinegar) down to the level of 0.48-1.0 PARTS PER MILLION! That is some potent stuff for Ye Olde Scnozzola, right there!

I’ll have to give them a try the next time I head to Alpharetta (teleworker in Fort Mill and office is in Alpharetta)! We have 521 BBQ here which has a pretty good spicy vinegar sauce. I guess I prefer the vinegar because I don’t care much for sweet foods or sauces…no longer drink sweet tea either and I used to love it!
To each his/her own…just glad we are all blessed with good choices all over the region.

you only prefer the vinegar! My favorite is the mustard base that also has a pretty good dose of vinegar in it! Some make their mustard base way too sweet for me! I like the tangy, tartness that vinegar gives to the mustard base!

I've been to Smokin' Pig many, many times (I worked about a mile from the joint). Now if I'm in the local area I go to Pompous Pig. For $15 I can get 1/2 pound of the pulled (any sauce you want on the side), fried okra, slaw and cornbread (my usual order). For me it is equal or better than Smokin' without the wait and they have hash and stew.

I grew up in Orangeburg - eating BBQ at Duke's - and for a long time thought BBQ required hash and rice and only mustard sauce. But then I married a girl from Raleigh, NC and was introduced to eastern NC BBQ with red pepper/vinegar sauce and Brunswick stew. I never adjusted to the Brunswick stew, but became a convert to the pepper/vinegar sauce and now prefer it to the low country mustard sauce. For many years, my wife made trips to Orangeburg to get Hash from Duke's and she froze it for me to go with our eastern NC pulled pork..... to me, the combination was unbeatable.
To each his own..... it's all good!

I grew up in north Augusta and BBQ had red sauce and yes we had hash. Leaving Clemson and moving to Atlanta in 1981 - it was the 4th of July and I started calling Marietta and then Atlanta supposedly BBQ joints. None of them sold or had a clue what South Carolina/Augusta hash was. Not a clue. How could that be? I have since moved around the country - Ohio,mass, tenn, texas, nc, Virginia, calif, then Canada, Asia, and now Florida and not one place has a clue what true hash is. The only time I get it is when I get home to Augusta. (No longer home.) The funny thing is that I honestly don’t love it (hash)- I do crave it and do enjoy it, but only because I can’t get it anywhere else. Occasionally places say they have it, but it is mucked up with potatoes and other crud. Nope,not right. Don’t get me started on the crappy sauces like mustard or vinegar. Just a bunch of posers. Lol
Now I have a hankering for good BBQ and hash. Since I live in St. Petersburg, there is no chance to get it. Maybe a road trip soon.

Hard to get mustard based BBQ here in Mississippi, but I was home in Batesburg-Leesville for a few days last week, and got back to Shealy's BBQ for the first time in decades. Nothing has changed: BBQ, hash, fried chicken, the veggies - it was just as good as ever. I had Shealy's come all the way up to Clemson to cater my wedding rehearsal dinner back in 1996.

occasions, when I made the trek to Batesburg to an old car junkyard just on the Orangeburg side, named Temple Auto Parts. Shealy's does have a great buffet, but the actual BBQ is just average to my slovenly palate.
On another sad note, I heard that Temples has finally crushed all their "old" cars. Another blow to the Old Car Hobby.

If you ever get the chance, jump on a flight to Austin, Texas. Then, drive south about 25 miles to Lockhart and try some real brisket BBQ. Don't listen to anyone else, go to Lockhart or Luling. The brisket is so good that no sauce is ever needed. Just straight up beef that almost melts in your mouth. The lines are long so get there early. Don't listen to anyone that says it's just as good elsewhere, because that's a flat out lie or they know nothing about real BBQ.

Smokin Pig has good food. The problem is sky high prices and the tourist vibe they seem to have adopted, IMO.
I used to go there often but now I probably go maybe twice a year and pick up some to go.
