Quitting on teams midseason will be the norm nowadays. Absurd what the NCAA had let happened to the sport. If they had been more aggressive when it was coming to a head, they could have regulated this on some level.

Court rulings have pretty much neutered any rules they had in place. Now, had they made sensible rules and regulations 10-20 years ago they may have been able to keep some semblance of control, but fighting players getting even a stipend served as the death knell for College football as we knew it.

I agree with you that the NCAA could have dropped their fight to keep the amateur status 20 years ago.
And I am also willing to admit that 20 years ago I was in agreement with the NCAA's stance that a scholarship, room, board, world class training, and an education was more than enough.
That seemed to be a popular opinion when talking football with friends 20 years ago.
But it turned out the be the wrong approach.

The NCAA stuck to their guns and argued to the Supreme Court that they were an educational organization that served the community. And therefore they should have amateur status.
Noe of the Justices believed any of that. They saw how the colleges bend over backwards to serve the broadcasters.
Brett Kavanaugh was very aggressive in his call of "BS".
Anyone can be a Monday morning QB (after seeing what didn't work) and proclaim with confidence what would have worked.

The courts have ruled that there will be roughly a $20M salary cap for each team and that bogus NIL deals are not allowed.
One way to eliminate a bogus NIL deal is to prohibit the NIL contract to be tied to "pay for play". If a contact is not tied to "pay for play" then the players can take that money and run. Eventually, boosters will realize it is not worth giving someone millions of dollars who is going to leave the team after 4 games.
I'm happy to see that this sort of thing (players leaving the team) is happening at places like NC State and FSU.

I think this season may be a little different because players late in their eligibility see the potential to jump onto the House Settlement for next season (if it gets approved). Players that know they won’t be moving onto an NFL career see an opportunity to get paid beyond NIL which many may not have been getting very much NIL anyhow.

The cap is only for what the schools pay the players. 3rd party NIL deals will still exist in addition to the $20M.
