Ten minutes on a warm stove would get rid of the CO2 - the air lock won’t help
Adding baking soda will neutralize the carbonic acid and phosphoric acid but will also add back CO2 Baking soda is sodium bicarbonate and will not react with the sodium benzoate (sodium can’t replace itself)

Only bc it would be really tough to get rid of the preservative that would stop any fermentation.
Using juice to make wine for instance one would have to buy juice that has no preservatives such as Welch’s Grape etc.

sodium benzoate is not acidic ... it is used as a preservative.

There are tribes deep in the Amazon that create alcoholic beverages used in rituals by chewing up leaves, herbs, and fruits, then spitting them into emptied human skulls and burying them to ferment.
This reminds me of that.
