and two racks of ribs. My question is this: does adding stuff to the water pan impart any flavor? Just for kicks, I sliced up two apples and put them in the water pan when I smoked the ribs. Don't know if it did anything as far as flavor or not.

I'd bet adding the juice to the foil wrap would do more than

You know what else I did? I took the liquid from the foil

(After the 2 hour part of the smoke) and added that liquid to my beans which I put in the smoker underneath the ribs.

I usually add 1/2 water and 1/2 apple juice to the pan. I'm not sure it makes a huge impact but my results have been good so far

They cracked way too much for safe turning and I have been cutting them up into chunks and ebaying them to BBQ enthusiasts.
What is the best size chunk to cut the pieces? So far, I have had good luck selling hockey puck sized stuff, but if bigger/smaller works better I'd like to know.

for differnt situations and grills.

Poor people use chips, they put them in little smoke boxes on thier electric grills to add a little smoke

the rest of us use chunks. I soak mine in water or old beer so they smoke longer.

smoked a ham over cherry wood and had cranberry in the drip pan. It turned out with a sweet crust of cranberryish flavor and the cherry smoke was all inside the meat.

Very good.

I use two beers in the drip pan when cooking chicken leg quarters. It keeps the moisture in and it adds a little flavor as well.

Use lots of apple juice with ribs and butts. both in drip pan and inside foil.
