Sausage seasoning

Since this a bye week, I am going to make fresh sausage. Always trying new recipes. Does anyone have a recipe for seasoning they use.

Legg’s pork seasoning blend 10. I like it a little stronger than they say to use.

I grew up with an Italian deli that was in the 5th Ward in Binghamton, NY and they made their own sausage right there behind the counter. Just incredibly good, and nothing has ever come close. They used caraway seed in the stuffing mix that was the bomb. Now, it's not country sausage, but I believe it would work just the same. I often add it to the stuff I buy in the store and it makes real difference.

are you sure the seed wasn't whole fennel?all the really good italian sausage i've ever has had it as an ingredient.it lends a licorice or annisette flavor to the sausage.the local market here carries a brand called gianelli's.out of syracuse of all places.excellent stuff.great in sauce,on pizza ,or on the grill.if any italian sausage doesn't have the whole fennel seed in it,i won't buy it.another great brand is dejulio's out of southern connecticut.

▢1 pound ground pork
▢1 tablespoon sage (dried or minced fresh)
▢1 teaspoon kosher salt
▢1 teaspoon brown sugar
▢1/2 teaspoon freshly ground black pepper
▢1/8 teaspoon red pepper flakes (or more if you like heat)
▢1/4 teaspoon marjoram (fresh if you have it)
▢1 pinch ground cloves

Mix it all up and let sit over night in fridge.


This is recipe I use. But usually add more sage & red pepper flakes and less salt.

After you do it few times you can taste your "adjustments.

Darn good stuff.

Thanks that is basically them same I use but I don't care for much sage and I add poultry seasoning.

Please do not put sugar or syrup in country sausage. Sage crushed red pepper salt works very well.
