Please help me to understand how this happens..

Texas A&M signs 34 UGA signs 32 Florida signs 28 Ole Miss signs 28 LSU signs 27 Vandy signs 26
And the day isn't over. I'm sure the other SEC teams will catch up. Meanwhile, this...
Clemson signs 23 UVA signs 23 VT signs 22 FSU signs 21 UNC signs 17 Miami signs 16
I'm sure we will sign a few more, but not near as many as the SEC. How does this work with 85 scholarships, and if they are oversigning and taking them away from kids, why would they sign with those teams and/or why are we not doing it?

There are several variables to consider....

including how many scholarship players the school will have returning, how many will count back to last season and how many count against this years limit.

Yes, but it seems like we sign in the low 20's every year.

When Dabo first took over, we only signed 12. You would think we would sign 28-30 at some point.

We did. Clemson signed 12 in '09, 24 in '10, 29 in '11, 22 in '12 and will sign 23 this year.
If you look at schools that sign those really big classes, there's usually a reason, like signing 15-16 in a particular year, or significant early departures. UGa and aTm both signed big classes after fairly small classes last year and they had several kids enroll early. The year Clemson signed 29, they expected to have to gray shirt Seckinger and one other kid, but we had some attrition due to grades and the numbers worked out.
BTW, I was looking at historic recruiting the other day and in '09, UGa had a top 5 recruiting class with good numbers. Due to early departures, attrition, and non-qualifiers, both Clemson and UGa expect to have 7 players each from the '09 recruiting class available for next season's opener.

That is one of the unspoken advantages of the SEC.

An understanding among SEC schools about the oversign and run-off approach. Hard to combat because no recruit feels he will get hurt or be beaten out at his position.

YESSS + ESPNSEC and no academic requirements + all the schools(maybe not Vandy) pay their players and use "chemicals" for fast weight, strength gain!!!

Same thing happens in Baseball

My son is a Junior in HS and looking at SEC and ACC schools. What we have found is the same in baseball as football. For example, UGA had 50-60 kids at fall practice and will only keep 35. What happens to those other kids? Their class of 2014 UGA baseball already has close to 20. Crazy, atleast it helped us eliminate a bunch of schools.

Why is it the media never reports those who were kicked off of the team to make room for others who are percieved to be better? It is time for some enterprising young reporter to investigate and make a name for himself.

So, living in College Station, I can explain A&M

They had several players (several JuCo's, enter mid year), which backdate to last recruiting class. The last class only had 19 sign on signing day (again they had a few mid year recruits). A&M had several scholarships open up.

You start by signing 10 or 12 that can't qualify.

From year to year those players count toward the class they signed with but don't show up until spring semester of the following year. They are figured in on this year's class and next years because of that.
It never catches up if you continue to sign players that you know won't qualify. Those 'extra,' players that are considered oversignees are most likely going to be rejected and recycled in next spring.
It's something you won't see Clemson doing intentionally, though we have one or two every year that doesn't qualify.
