I have a Recteq pellet grill. It is the most versatile cooker I have ever owned. I bake, roast, smoke and sear on it. Yes I have baked a macaroni pie on mine. I have not gotten around to baking a cake on the smoker yet.

Either medium rare or brisket style. Anything else is disservice. Start resting it in a dry cooler packed with towels to keep it at 203 as long as possible. I rest minimum one hour. It has changed everything. People grunt with every bite. My wife asks me to smoke picanha or Tri-tip weekly.

I always wrap at 165 as well in pink butcher paper. I also started using mustard as a binder. Game changer. Add one cup of au jus, rendered tallow, or beef stock at wrap point. Any smoke beyond 165 makes it bitter.

How could you leave fish of your list?
I like to smoke all meats, some cheeses, basically anything that makes sense. I am not a sweets guy, prefer to eat salty or sour stuff so smoked meat is my jam.

I got a smoker for Christmas. Smoked St. Louis ribs are great. Smoked whole chicken is delicious.
I botched a duck - can't say it was great.

Tri tip is good. Love a great pork butt . But reverse searing a thick porterhouse on the smoker is a very special meal. That said have not met a meat that is not better slow smoked!

Just gotta do it and follow the science. Smoke to 165, wrap and add liquid. The rest is the most critical. I pull it at 203 and put a towel in a dry cooler, the meat, and then more towels. Let it rest for an hour. It’s stays close to temp and just falls apart when you start to slice it. It’s the most tender, juicy brisket you will ever have. Try using mustard or pickle juice and mustard as a binder. Builds a sick bark. Pink butcher paper wrap keeps that bark intact. Tin foil turns it to mush. Just be patient and follow those rules and you’ll make the best brisket you’ve ever had. Avoid any rubs with sugar. It’s burns quickly.

Would recommend smoking a pineapple. Cut it in half, top with brown sugar and cinnamon then smoke 45 minutes at 250. Eat it straight or use it on a burger

Pork butt is the easiest and not very hard to make people who don't work a smoker that you're a wizard.
Ribs are my second favorite. I see a lot of people that think they produce a good rib but I've tried theirs and they are liars. It's taken me a while to perfect the rib to the point I'll put mine up against anyone.
Brisket is another favorite. I don't do a lot of them due to cost and time but there isn't much I can think of that's better than a good brisket.

For me it has to be brisket..after maintaining a fire for 10+ hours and tendnding to a big 12lb slab of meat for hours....when you unwrap it and it's jiggly and and cut into it and the juices start flowing out ohhh man 😆 no better feeling
