There have been a plethora of edible mascots before. This is the first one to make the claim out in public and to have the deed done in public. All the others were behind closed doors, or behind the Willie Bee dumpsters.

Yes. Prince Cheddward was the mascot when it was called the Chees-it Bowl. He was introduced at our game against Iowa State in this bowl two years ago

I took that as meaning the mascot itself is edible. Not representative of something you can eat. Like cheese-its, oranges, etc. You couldnt actually eat the mascot itself in those.
