Smoker recommedations
Dec 27, 2023, 8:35 AM

My Masterbuilt electric smoker I have had since 2008 seems to have died over Christmas. Tried to repair it but no go.
I want to buy another smoker before New Years since I usually smoke a butt for New Years Day. Thoughts on what to get. Get another Masterbuilt or a pellet smoker or some other type?
I don't need a big one since only smoke a couple of racks of ribs or butts. Thanks

I use an Orion-closed system that uses chips inside cylinder for smoke and charcoal top cup and outer ring. Smoke times are about half of traditional smoker friend from Louisiana tipped me off to it years ago and refered to it as a “Cajun Microwave “.

In addition to grilling burgers and hot dogs, you can use it to smoke brisket and ribs, cook a whole turkey, or turn it into an outdoor oven for pizza and bread. The biggest downside; it's a little on the pricy side. They are ceramic, so it takes quite awhile to cool-off after each use.

Look on macbid app to see if you can get one discounted if you live near the Anderson, Greenville or Spartanburg areas. Sometimes you can find them and get them a few hundred dollars cheaper on macbid.

I personally like a simple Weber kettle. Use charcoal and wood chunks for smoke flavor. Cheap and easy. I may get a Weber Smokey Mountain just to change it up some.

I have both a Weber grill and smokey mountain

I used the grill for chicken breast and thighs when it’s shorter cook. The mountain I use for buts and briskets. Basically anything that’s a long cook.
You will need to pay attention to the cook as the temps can fluctuate. I personally like this because I like to tinker with the cook. Plus it gives me an excuse to spend to day cooking and other things.
Never had complaints with the results . It really comes down to how you like to cook. I’m guessing with your experience with electric cookers you like a steady temp. So most “real” charcoal smokers won’t be what you want.
Hope this helps.

Convenience and ease that those types provide. So, I would recommend a pellet grill. I have a pit boss that I’ve had for a few years it’s great for smoking but not super for grilling; I use a Weber kettle for cooking meats that need to be seared. Also I’ve had a few reliability issues with my particular pit boss I’ve had to replace the main circuit board and the temperature sensor even though I keep it covered when not in use. The replacement parts were sent for free, but it’s a pain to go out to fire up the smoker only to find out you won’t be smoking that butt you’ve been brining.
If you’re near a Lowe’s outlet store; I was at the Greenville store recently and they have a ton of pellet grills for 50% off

Just for smoking my father and uncle both own the smaller Pit Boss pellet smokers. Choose your wood type pellets, set temp and go.
Im a little more hands on cooker so I bought the Oklahoma Joe's Grill and cold smoker combo and really like it. I have cooked and smoked everything on it. Since I have had this a couple buddies bought one. They are big and heavy steel, well made, but its not something you pickup and put in shed for next time. But i use the grill side probably 3 times a wk and smoker 10-15x a yr so mune is used for everything.

I have a Weber Smokey Mtn smoker which does a beautiful job. The draw back is the you have to baby sit it to monitor temp, load up & light, etc. Have not used it in a while because of the attention charcoal smokers require.
My friend has a Traeger which he loves. Just set the temp, turn it on and go. Has wi-fi monitoring of both smoker and meat temp, automatic temp control. just pour pellets in hopper, can use as grill or smoker, etc.
The Traeger pellet smoker is definitely on my wish list.

Masterbuilt Digital & Sous Vide
Dec 27, 2023, 9:56 AM

|
I've had an electric MB 30" digital for about 8 years. Sits outside year round, randomly covered. I've used it in the rain. It's a quality product. I have kicked around replacing that and my 18 year old Weber Summit 6-burner with a single pellet grill/smoker though. Also, about 3 years ago I switched to sous vide then smoke for pulled pork and brisket. Easy and foolproof. For PP, it's 18-24 hours (pull it any time between) at 165 in the SV and then about 3 hours on the smoker. For brisket, it's 24-36 hours (pull it any time between) in the SV and then 4-5 on the smoker. You won't get as much bark but you will know to the minute what time your meat will be ready, you can sous vide days in advance and leave a few hour smoke on serving day, and you won't lose a drop of juice. I find letting the meat sit for a day after sous vide helps it hold its shape because it is fall apart tender after the SV cook finishes. www.seriouseats.com has the recipes and explains the science. (It ain't the final internal temp that matters, it's the length of time you hold the meat at or above a certain internal temp.) Sidenote 1: Throw you some eggs on the smoker for an hour or two for smoked "hardboiled" eggs. Sidenote 2: Try guava wood. Mild smoke, slightly sweet, great with pork or chicken.

My experience with pellet smokers is they do not give my foods enough smoke taste. Have a Bradley and like it. Pucks are expensive but you pay for the convenience. Had a gas smoker but had to constantly adjust temp hated it but it did a good job smoking.

I've found the charcoal pellets give more of a smoke flavor than the regular pellets. You can usually inc/dec the amount of smoke it generates as well.

If you're just doing ribs and butts, I'd just go with a small, cheap Pit Boss pellet smoker. They have a searing plate you can slide open that allows you to grill/sear as well. Good little setup.

I have a 340 and a 590 Recteq . I had an Orion and and our chefs for Masters hospitality used a Traeger for years . A couple of years ago I let them use my Recteq 590. The went back to their restaurant in Oregon and ordered a bigger Recteq RT 1250 . I highly recommend the Recteq . Only sold at their Evans , Ga (Augusta) and store n lore Utah. They do ship. GREAT support after purchase and a good warranty.

I have a Kamdo Big Joe and love it. Big enough to do a 20+ pound Turkey on each Thanksgiving and can easily smoke 4 butts at once for a large gathering of BBQ. I also use it for smaller meals like pork tenderloin and the divider system makes it so easy to sear then bake something. As mentioned before they are great for making puzza in too. I have a Flame Boss accessory that allows me to do low and slow meats like brisket and pork butts and manage the cook while away from home. You just have to fill the entire thing with lump coal to make sure you have enough fuel.

I got a Masterbuilt Gravity Feed from Costco last year to replace my Masterbuilt Electric. I could not be happier. This beast get up to temperature fast and does a great job smoking pork butts. Watch out though, you will find them cooking faster than the old Electric. Not a bad thing since the meat comes out just as juicy.

A lot depends on where you are in life too. I was an offset guy for years. All I ever did. Kids started getting older, and weekends started getting broken up with games and tournaments. It was impossible. I was gifted a pellet smoker and it's great. I'm sure once the kids are out and life slows down I'll probably go back.
