Need help from an upstate SC BBQ hash connossieur

For many years, I remembered getting BBQ from places like VFW, local fire departments, American Legions, etc. when they would sale for a fundraiser on Memorial Day and 4th of July. They always had the traditional chopped BBQ but they would also sale the hash; a darker dish, juicy, often cooked with onions. You could tell it was something that cooked a very long time. We have since moved and cannot find anyone who even knows what I am talking about. The few times they thought they did it was Brunswick stew, which though I also like, is very different. Not sure how widespread the hash is or if it was just small towns like Blacksburg or Gaffney.

I am now convinced I will not find it for sale here and am trying to learn how to make my own. Anyone with any suggestions, help, recipes on how to make it? Thanks in advance.

Not sure about where to get in the upstate but yeah it's definitely an SC staple and it definitely ain't Brunswick stew

I've never actually tried this recipe but I can attest to the nastiness of authentic Sweatman's hash

I grew up on Dukes BBQ and hash in Orangeburg. I do like it, but from what I've heard about how it's made, I don't think I'd want to make it..... :)

I used to play a lot of golf at various Myrtle Beach courses and once ended up paired with the owner of Scott's bbq
out of Hemingway (and Charleston now). He refused to talk bbq when he found out that I only smoked rump roasts.
Then he refused to ride in the same cart as me because I was wearing my Clemson attire!! He is a huge usuck dude,
but voted the best bbq in the carolinas annually.

Dowd's in Newberry and Lee's BBQ in Greenwood are two that make it that I know of. I have seen both Lee's and Dowd's Hash for sale at some upstate Food Lion stores in the meat dept.

I’ve been sold on Dowd’s for a couple years now. Like you said, it’s in some grocery stores in the upstate. It’s in Food Lion in Chapin.
I don’t know how to make but it would be fun to try.

I’ve made it a dozen different ways but the base recipe is 1:1 smoked poke butt to onion, salt, pepper, vinegar.

Cook the onions down first, you want them to just start caramelizing but don’t let them go too far. Throw in the other ingredients and go low and slow. You may need to add a little water, don’t worry, it’ll cook off. After about 3 hours you’ll have what has is supposed to look like. From here, adjust salt, pepper, vinegar to taste.

Now, I make a barbecue sauce that I add at the end to add some umami flavor. I

You absolutely WILL NOT FIND HASH in the Upstate anywhere that I know of. You might/maybe able to find it on the food truck in Ware Place , at the light on US 25 and SR 8. Maybe. Seems like there was a place on Easley Hwy. Love Love hash!! Antleys in Orangeburg, soooo good! Good luck Tiger

Midway truck stop in union has the best in the upstate...also some of the best chicken stew in the country.

Yr we take 2 coolers to Midway and load up on hash and chicken stew. Both are awesome and the hash is not tomatoey like most hash I have had. It gets my vote my favorite

Yep, growing up in Greenville, Little Pigs don't sell hash. Friend of mine from Cola took me to the ORIGINAL Maurice's in West Cola. To put it lightly I've been hooked for many years. Edgefield, Ridge Springs, Batesburg Leesville, Lexington, Sumter, Mannin and The Burg 🍊

Bubba’s in Spartanburg. Had a hash sandwich there today. I still prefer Midway in Union that someone mentioned above but it was still good.

Hash, a South Carolina tradition. There are more recipes for hash than a dog has fleas. Sounds like to me you are looking for a hash normally cooked in the upper part of SC. I'm go give you a recipe that might work for you. The first thing you are going to need is a day when you don't have anything else planned.

Now for the hash Ingredients.

5lb. chuck roast
5lb. boston butt
4-5 lg potatoes peeled and cut up
2-3 large onions chopped up
Salt black pepper cider vinegar yellow mustard

place meat in a stainless pot with potatoes and onions and add some salt and pepper
Bring all to a good boil then turn down to where it continues to gently boil
Stir with a paddle to keep from sticking
cook until meat falls apart
Turn off and let cool

Note 1: cut meat into 3-4 pieces will shorten cook time
Note 2: potatoes should have just about cooked up, helps thicken a bit
After meat has cooled sort through and pick out anything you don't want in it then pull apart any meat chunks
Place shredded meat back in pot and add enough pot likker to cover it and bring heat up to a good simmer. Stir often to keep from scorching. cook several more hours adding pot likker as needed

Now you begin to season. Check to see if you need salt, add to taste, same with black pepper.
Now you can start with about 1/4 cup vinegar and 1/4 cup mustard. Continue until you get it the way you like it or you can completely leave it out. your choice. Serve over rice or eat with white bread and enjoy

I worked at Georgia Iron Works during high school Summers and one of the employees worked at Sconyers at night. He used to bring leftovers from the night before to work. I haven't tasted better ribs 40 years later. Edmund's in Belvedere, S.C. had the best hash back then.

I realize you said upstate, but if you ever go through Hartsville, Westwood BBQ has liver hash. It is my favorite. They have pork hash also.

Kelly’s bbq in Greenwood has some of the best. Only available on Memorial Day weekend 4th July and Labor Day. Old school brown hash that Gwd fire dept made. Always keep qts in freezer for special times!

Go to James Rollers “Going Whole Hog”. There are great hash recipes, note that they are bulk and you’ll have reduce the volume of ingredients. I’m from the Midlands and have participated in cooking a lot of hash for friends and church functions, but have never cooked a small batch for my house. Really not a lot of different ingredients but you gotta get the amounts correct. There are various recipes and all are really good. But yes, you always cook low and slow. Don’t want it to stick to the cast iron pot. Love me some SC Hash!!

We have made 2 batches of hash from the “Whole Hog” book by Roller. Both were excellent using the recipes for crockpot hash. We did cut back on the sugar and pepper. Similar to what my grandmother made back in the 60s.

Lee's Barbecue outside Waterloo (on Lake Greenwood) is very good. I haven't been there in six years since my mom died. They also sold quarts of Lee's hash at the Piggley Wiggley in Ninety Six.

Hope you find what you're looking for, but its wild how so many people have so many different tastes. Hash to me is terrible. I feel like it took something decent, and pork butter, and made it worse. This is why Texas BBQ rules to me. Have beef ribs going on tonight. I just can't even imagine seeking out somewhere to find hash. To each their own though. Nothing wrong with it at all. Just interesting. I'd imagine this is why some excellent Texas style BBQ places that have opened around greenville get bad reviews, because I don't think if you're the kinda guy looking for hash, you're going to appreciate Lewis or SBH brisket or beef ribs.
People talk about 3 little pigs, Charlie's, etc etc pulled pork. I'm like i can throw a pork butt on my smoker and let me 9 year old pull it off and take care of it and it will be better than those places. Peoples bars are just so low to me.

Make your own. Follow the science. If smoking or slow roasting take it to 165 degrees and wrap the meat and add a cup of beef broth to steam the meat. Or use a crock pot. The most important part is the final temp should be 203-205. If smoking or roasting let it rest in a dry room temp cooler packed with towels for an hour. Then shred and add to the hash soup. It’s kind of a soup tbh compared to pulled pork. I use beef pork and a venison roast as my base when I make it. Plenty of onions garlic and beer mixed into that bbq flavored soup. Just be careful and remove all gristle and bad fat. There’s none better than homemade and you can freeze it for later. There are a lot of good recipes online. That 203 degree temp is the most crucial. That’s when the collagen and connective tissues render into meat Candy ensuring fall apart meat!

I graduated to more Texas style bbq. I still do at Louis style ribs though. More brisket, Tri tip, pulled pork, picanha, beef ribs, spare ribs, pork loin, and even veggies on the smoker. My first taste of hash was the upstate. My father made it annually and bought from a local Fire Department in Spartanburg when he stopped. My years in San Antonio put the love of Texas BBQ in me.
