Yes we will have Turkey and Ham, but I always love the other meats for Turkey Day.

I try to get a prime from Costco but had to settle for choice. Trimmed it up and just do basic salt and pepper rub with hickory wood chunks.

Low and slow and usually try to not wrap to get the best bark. Will wrap if takes to long but try not too. Then cover and rest for several hours.

Get temp to 200 to finish or soft probe as long as it close in temp. Never had any complaints.

Used mesquite in the past but I found I prefer the hickory.

Right about 199 internal and most areas are super tender.
Then wrap it and let it rest in the warming bag until we eat. We eat at 5 so I will watch it and make sure it stays at 140 or above until then!
