If you could start a restaurant with a small menu

What would your thing be?
I think I’d have tacos done well with fresh tortillas, familiar taco fillings like shredded beef and pork carnitas, and no hipster shiiitt like pickled red onion garnish. Also, I’d have a killer salsa bar.
We’d sling beer, tecate in a can with the option for lime and a rim dunk in salt.

Florence to like five hundred. You've got your normal American Mexican restaurants, then you've got several Taquerias which have more authentic stuff, then a taco truck at Local Motive brewery, then probably more taco trucks running around. The last thing needed is another place to get a taco - but your location may vary...

the one across the road from Sonic on the south side of town is really good for authentic.
The one beside Defy is really cheap and really good for the american/mexican style.

We've got a restaurant King Jefe that I never really like the food, mainly don't like their combinations on the tacos.
However, we got a takeout buffet for the office from there yesterday - that #### was good when you can make your own taco. Beef or chicken, some red sauce, shredded cheese, lettuce/tomato, then some cheese dip on top, that's my combo.
So, Tl;dr - do a taco bar...

I have a bunch of family from Louisiana, we used to go there alot when I was a kid, plus I lived there for a year in the mid-90's. Love that type of cuisine, always have.
Back in the 70's and 80's, my aunt and uncle from Baton Rouge used to come to SC for Thanksgiving. My uncle used to make this fried turkey in a crab boil pot that everybody raved about. Best turkey we ever tasted. He would even cook some for our neighbors and other local relatives. It was a revelation. 20 years later, EVERYBODY was doing it.

but skewers of grilled and/or smoked meats served with various international garnishes and sauces (i.e. Latino steak would be rubbed with cumin, coriander and chile powder and served with chimichurri and pico de gallo). Korean BBQ would be served with gochuang sauce, pickled cukes and carrots, so on and so forth.
Veggies or rice would be the only "sides" served. It would be all about the meats and enhancing the flavor thereof.
This is my food truck dream.

Fine dining. Locally sourced top-quality proteins and produce. Fresh fresh fresh. Everything made from scratch. Simple preparations, American sensibility with classic French influence in technique, sauces, and presentation. Good ingredients, when treated correctly, yield good food. I would tend to gravitate towards seafood, with a meat dish or two.
When your thing is quality products and flawless technique, your menu can rotate and feature multiple sources of inspiration without being tied to a single culture’s food.

The other day I was thinking about this.
I think meat would be a focal point of the menu. Playing around with the budget blackstone lately, I have gotten pretty good at doing burgers on it and I could probably dice out some fun chicken items. Wings are some of my favorite food... but with the food prices lately, I dont know if that would be a good starting point to get folks in the door.
Between the flat top and the grill, I think I could make at least a few folks happy. I cooked chicken parm the other night that came out excellent, so that could be part of the tour of the trailer park.
