Watching NASCAR and cooking campfire chicken and rice!

Recipe: Chicken breasts, onion, celery, carrots, and cream soup of your choice! Then cook rice and voila, you made dinner!

Been doing stages so long, I barely remember races without. NASCAR has changed a bunch since the mid ‘80’s when I started watching!

Hobos….dad showed me how to fix many years ago you patty out your hamburgers slice some potatoes and onion wrap in tin foil and cook in oven. He said back in the day he would jump the train and would see hobos cooking them over open fire. Still love them today and the makes your house smell wonderful for a few hours while cooking… lol

Finally got the chance to cook my bride her Valentine’s meal: 1 1/2 thick, well marbled T-bone Steak . . . Pan seared in butter, coconut oil, seasoned with onions, garlic and rosemary, roasted fresh asparagus, baked Yukon gold potato w/ sour cream, chives and sharpe cheddar.

Steak is a rarity at this house!!!

It was worth the wait . . . and there is enough leftover for steak and eggs in the morning!!!

I’m with the little one at Universal Studios in Orlando. Ate with the Marvel superheroes and the kids loved it. Roast pork, roasted carrots, potatoes, salad, strawberry cheesecake.
