My parents were very simple country people. Very much like Jed and Granny Clampett before the oil. And that was a wonderful way to grow up. Squirrel was a staple in our diet and my Dad raised a few angus cows to make sure we always got one in our freezer each year. We also raised rabbits for meat. Lots of fish and shrimp from the rivers and creeks around Johns Island. And he had an acre garden so fresh vegetables in the summer and lots of canning for the rest of the year. Mom made muscadine jelly every year too. I sure miss that.

Your folks and my late father knew the assignment...
As my dad was a avid deer and rabbit hunter...
We would occasionally have deer/rabbit with either rice or mashed potatoes with homemade biscuits!!!

My Dad taught me to shoot squirrels with a .22 when I could barely hold it. He’d fuss if I didn’t shoot them in the head. He said “ there ain’t much meat in them to start with. You lose too much meat shooting them in the shoulder”. If I got a bunch of squirrels, Mom would fry them like fried chicken. If I didn’t get as many, she would make squirrel and dumplings to make them go further. We didn’t have any deer on Johns Island when I was growing up. But they are all over the place there now. We raised rabbits to eat because they had so much more meat on them than a wild rabbit. But my Dad did raise beagles and sold the pups to rabbit hunters. And homemade biscuits almost every night. My Mom would cook for 2-5 hours every evening. Lots of love in those meals.

Then you know how to appreciate some of the simpler times in life. When I was young and even pretty often nowadays, there were very few meals where we didnt catch, shoot, grow, or harvest most of what was being served. Still eat a lot of harvested game, fish, mushrooms, eggs, but my neighbors often supply a lot of my veggies while in season. Hard to have free range chickens and a garden in same yard.

The only wild game in my diet these days is venison. And I don’t even have room for a garden anymore. I do frequent the local produce stands in the summer.

Chilli's to go they left off half the order and the portion size was for a toddler. I placed a 70 dollar order got 10 dollars worth of food. They tried to to add 22 percent tip for pick up. Never again Chilli's.

Pan seared, finished in the oven pork tenderloins + fried cabbage mixed with rutabaga & turnip roots w/ a crumble of crispy bacon + sautéed zucchini-onion- fresh grape tomatoe topped w/ mozzarella and provolone cheese . . . melted of course.
Grapefruit or a cosmic crisp apple for dessert.
