Fresh cukes, tomatoes and purple onion in balsamic vinegar, chicken marsala with whipped potatoes and fresh green beans cooked all day with bacon and fresh peaches. I love SC summer foods.

I bought an Oklahoma Joe drum smoker last week. I just smoked ribs on it for the 2nd time. They turned out great today. Trying to perfect my craft before football season starts.

Ribs can be tricky because you can’t really monitor temp accurately. I start checking doneness once the meat pulls away 3/8” from the edge of the rib bones. I pull them out and try to remove a central bone. If it pulls away clean & easy, they are ready.

Pork shoulder is much easier. Place a probe and smoke to 165. Pull the shoulder and wrap in pink butcher paper. Pink butcher paper keeps the bark intact. Foil turns it to mush. Add a cup of rendered tallow or broth and smoke until it hits 200. Don’t go over 205. Place it in a dry cooler to rest for a minimum of thirty minutes. It will stay hot for up to four hours. Will be the most tender pork you’ve ever had. Just don’t put any sugar on until last few minutes. It will burn up and ruin it. I also like to run hot water in the cooler to heat it up so it keeps the meat warm longer. Just dry it out well before adding the pork. The shoulder bone should slide out easily and clean. It’s ready to chop or pull after resting.

Old fashioned butter fried Reuben sandwich with steak fries in the air fryer. The seeds in the rye are a little much but deliciousness nonetheless!

Today it’s tri-tip in the smoker with prosciutto and fontina cheese wrapped broiled asparagus and Parmesan mashed potatoes with heavy cream and lesuer peas.

If you have never had a Tri-tip before I highly recommend trying it. They are more available today than ever. Walmart even carries it. It’s similar to brisket in texture and flavor but takes less than an hour to smoke and reverse sear. Just cook it to10 degrees of desired doneness at 225 (medium rare is 130 so pull at 120) and sear on high temp (550-600 degrees) and grill for two minutes per side. Place in a foil tent and rest for minimum five minutes. Even well done it’s as tender as brisket with a better flavor. Make sure to slice across the grain to make most tender. About the thickness of a pencil is best.
