Just fried up a batch and they came out great. Mater season is coming to a close, it was a good one...

Oh man...I may have made a mistake...my wife grabbed the panko (we made them together) but I said no and went with the Italian fine crumbs instead...should have trusted her instincts and went with the panko...

Actual fried green tomatoes done in the south is done with cornmeal. I use flour and seasonings.

I tossed them in a flour and cornmeal mixture. Then dredged in milk egg mixture. Then coated with the Italian bread crumbs. Fried in olive oil. Delicious!

I think it has something to do with the texture.
I generally love "processed" tomatoes, like salsa, pasta/pizza sauces, pico de gallo, vegetable soup, etc. And, I love fried green tomatoes with a nice remoulade.

75% yellow corn meal + 25% SR flour + salt + pepper . . . They’ll find the hot oil all by “theyselves”!!!
Love them on a grilled burger with homemade pimento cheese too!!!
