Been eating like garbage most of the week, felt like making something nice tonight.

Made salmon in a coconut curry, jasmine rice, and crispy Brussels sprouts. Pan seared the salmon then set them aside, sweated out some shallot, garlic, lemongrass, and ginger, then added two big spoons of red curry paste. Cooked that down, then in with a can of coconut milk. Let it simmer, then added in red bell pepper and seasoned with brown sugar, fish sauce, and a bunch of lime juice. I think this would be good with pretty much any fish, shrimp, or chicken.

Crisped up the sprouts at 450 on convection then tossed them in some sweet chili sauce and back in the hot box to caramelize.

Drank a couple Busch lattes.

Regular pepperoni and Greek salad.

Typically get supreme with banana peppers i stead of mushrooms, except at sode street.

The crust and sauce is so good we dont get all the other stuff.

been charring broccoli a ton lately. tossing in olive oil, nature seasoning, garlic powder, 20 mins at 425.

cod in air fryer. holy h e l l fish in air fryer is good. crispy.

I will say, Rica uses mostly fish. No calamari, scallops, shrimp, etc. Just fish and something else. But the taste is 100% spot on. In Mexico they toss in fish, shrimp, squid, scallops, conch, everything but the kitchen sink. My standard lunch in Mexico is ceviche and chips with a cold Dos Equis with a lime. I can eat that lunch for a solid week and not get tired of it.

Exchange student going to Brasil next week. Dinner was catered in veggie, chicken, and steak tacos cooked on site, guacamole made right there as we watched, Pacifico cerveza. Some kind of Coconut milk drink. Brownies for dessert.

long story short, I picked up slim chickens haha

long: was trying to pull the trigger on a new stove top.

ended up going to both HD and Lowe's, with no purchase.

took way longer than I anticipated........called wife and kids were screaming and she was asking about what I took out of freezer (answer: nothing). said eff it I'll pick something up for us and the chicks wanted mac n cheese and hot dog.
