A while back Obed® asked the tnet braintrust how to make picture perfect eggs and we all had universally bad advice EXCEPT ryanadidas® who recommended straining off the thin albumen from the white.

Welp, last weekend I finally got myself a little 2" strainer (which fits perfectly over a wide-mouth mason jar, btw) and tested it out with some shakshouka. I'll be ###### if it didn't work like a charm.

It is a game-changer for smoked wings for sure. Keeps skin crispy and non-rubbery.

I've never done it for straight-up grilling. When I grill wangs, I normally start them in the oven, then finish them on the grill. That way you can have the heat up pretty high on the grill to crisp them without having to worry if they're done inside.

If I leave the wings in an uncovered bowl in the fridge overnight and finish them at 450-500-ish on the smoker, I’ve never had them not be crispy.

I might try baking powder the next time I buy the wings and have to turn around and cook them an hour or two later.

restoration of my project car including a two stage paint rather than using a single stage which needs such continuous attention and the brand of paint and clear which is presently the best on the market.

What he failed to do was tell me Glasurit's best paint and clear cost in the $290/ltr range and that it would increase dramatically with time. Otherwise, he has failed to loan me the $2500 I need to purchase said paint and clearcoat products.

Frankly, overall I was enjoying life more back when I was ignorant.
