and it drives me insane reading what she writes.

The benefit of the Oxford comma is that it makes SOME lists easier to understand. For example, if you're simply listing three names, leaving off the comma before the "and" has little effect on understanding the sentence. BUT, if you're listing three complex thoughts, NOT having the comma before the "and" will make the sentence confusing.

Here's an example:

James Madison eventually supported a two-party system because it allowed for political contrast, a clearer leadership choice for voters, and it also allowed for the political expression of fundamental philosophical concepts.

Now read that without the Oxford comma:

James Madison eventually supported a two-party system because it allowed for political contrast, a clearer leadership choice for voters and it also allowed for the political expression of fundamental philosophical concepts.

The worst is when the Oxford comma is left out of a list of news headlines. I see that all the time and it's confusing.

Just use it all the time, as I was taught. Not using it can cause confusion, while using it will never cause confusion.
