daughter is getting her wisdom teeth taken out on Friday, I made a bunch of tomato soup and froze it (thanks to our new chest freezer.) I also ran across the zuppa toscano recipe from Olive Garden and it's pretty awesome.

tomato soup:

roast 6-7 roma tomatoes with a white onion(quartered) and a head of garlic, coat in EVOO and red pepper flakes and oregano for 30 minutes at 400F

Using a blender, blend the roasted veggies, add to pot with 1/2 cup of heavy cream, 1/4 cup of veggie or chicken broth, 1/4 cup of shredded parm cheese. Salt and pepper to taste, bring to a simmer for 15 minutes


zuppa toscano:

Brown 1 lb of Italian sausage ( I use the hot), remove from pot, leave the grease. Add in 2 TB of butter, a chopped onion and cook until translucent, add in 1 tb of diced garlic (measure with your schlong.) Add in 3 tbsp of flour slowly, don't burn it. (I use med heat.) Add in a tsp of Worcestershire, tsp of hot sauce, tsp of parsley, tsp of oregano. Quickly add in 5 cups of chicken broth and 1 cup of heavy cream. Thrown in 1 lb of diced potatoes (I use Russet) bring to a simmer for 15 minutes, and in 3 cups of chopped kale and then simmer for 5 minutes or until the kale is wilted. I add in some red pepper flakes at the end.


Both freeze well and can drop in the microwave and have a pipping hot soup in 3 minutes

My favorite recipe is:

Recipe 9 Lookup Ingredients 10 Lookup Directions
104 A 104A 1 cup butter or margarine A 104A Heat oven to 350.
B 104B 2 cups sugar B 104B Grease 13 x 9 inch pan.
C 104C 2 teaspoons vanilla extract C 104C Melt butter in microwave.
D 104D 4 egg D 104D Stir in sugar and vanilla.
E 104E 3/4 cup cocoa E 104E Add eggs, one at a time, beating well with spoon after each addition.
F 104F 1 cup flour F 104F Add cocoa; beat until well blended.
G 104G 1/2 teaspoon baking powder G 104G Add flour, baking powder and salt; beat well.
H 104H 1/4 teaspoon salt H 104H Stir in extra ingredients.
I 104I 1 cup nuts or chocolate chips, optional I 104I Pour batter into prepared pan.
J 104J Bake 30 to 35 minutes or until brownies begin to pull away from sides of pan.

Grandfather's recipe

8lb catfish filets
4lb bacon (or fatback) diced/chopped
8lb diced potatoes
5lb onions, chopped
3 large cans of tomato sauce
4 cans tomato paste
4 tbsp salt
2 tbsp black pepper
Tabasco sauce to taste

Boil catfish in large pot with water until meat falls off bones. Remove bones and fish, pour out the water into another container (but KEEP the water). Fry up the bacon in the pot you're cooking the stew in until crispy. Add diced potatoes and diced onions to the bacon, then add some catfish water back enough to cover. Cook/boil until potatoes almost done, then add all other ingredients (EXCEPT the catfish and tobasco). Bring everything to a fast simmer and then add the catfish back, and extra water as needed. Simmer for at least an hour.

Serve and add Tabasco to taste.


SERVES THIRTY PEOPLE.

Stolded it from reddit, but it's pretty darn good. Better than anything you may get lucky finding in a grocery store.

2 Cups Distilled White Vinegar
1/2 Lemon, thinly sliced
1 1/2 Teaspoons Black Pepper, freshly ground
1 Teaspoon Cayenne Pepper
1/2 Teaspoon Crushed Red Pepper Flakes
1/4 Cup Sugar
1 Tablespoon Paprika
1 Teaspoon Dark Chili Powder
2 Teaspoons Accent seasoning

put the 2 cups of distilled white vinegar and ONLY distilled white vinegar. Don’t use apple cider. Warm the vinegar up until it reaches about 150 on an instant read and then put the lemons in for about 10 mins or until translucent while all on medium high heat. Remove lemons from vinegar. whisk in all your dry ingredients and then simmer another 10 mins just make sure the sugar is completely dissolved. It’s amazing.

1+ Lb of ground turkey or ground beef, I got both, gotta decide which one
brown meat (TWSS) and add a shitton of spices like chili powder, oregano, garlic, cumin, red pepper flakes, salt, pepper, maybe some cayenne pepper.
Sautee a finely chopped onion in a pot with some olive oil
Maybe add a bell pepper or two to that as well, I dunno, whatever chokes your goat.
Throw in some jarlic, cause jarlic is OK with me.
Add beef or turkey back to it, then top with a couple cans of diced fire roasted tomatoes, I buy Muir Glen when they are on sale. Maybe a can of crushed fire roasted tomatoes as well.
One can of red kidney beans, rinsed
One can of black beans, rinsed
one can of corn, rinsed (this is optional, I like it, others maybe not so much)
Simmer all that. Add a little beer if you need some liquid.

Serve with tortilla chips or fritos.

Freeze the remaining to be used at a later time.

Ingredients
1 Tbsp Olive Oil
2 Tbsp Butter
2 Bay Leaves
1/2 tsp Thyme
1/2 tsp Salt
1/4 tsp Pepper
7 cups Chicken broth or water
1 lb Green Split Peas, rinsed and sorted (unsoaked)
1 tsp Liquid Smoke


Add the bay leaves and thyme, and salt & pepper.

Add the broth and liquid smoke.

Stir in the split peas.

Place the lid on the pot and lock it in place. Set the steam release knob to the Sealing position.

Choose Pressure Cook/Manual, and use the + or - or dial to choose 18 minutes. It will take a few minutes for the pot to come to pressure.

When the cooking time has finished, let the pot sit undisturbed for 15 minutes to naturally release some of the pressure. Then turn the steam release knob to Venting to quick release the remaining pressure.

When the pin in the lid drops down, carefully open the lid, facing away from you. Remove the bay leaves.

Taste and adjust the salt as desired.

Serve hot. The soup will thicken quite a bit when it cools, that is normal.

well, ok soup - Shrimp Chowder is one of my favorites, but may need small shrimp for daughter.


Shrimp Chowder


Ingredients:

8 strips of bacon, diced
1 Kg (2 Lb) shrimp peeled and deveined
Fat for frying as needed
1 medium onion, diced
3 stalks celery, diced
1bell pepper, diced
3 cloves garlic, minced
60 mL (¼ cup) all-purpose flour
1L (4 cups) chicken broth
Cajun spice blend - see below. I have used all of this but I love this flavor, recipe calls for about 1/3 of it
500g (1Lb) potatoes, diced
750 mL (3 cups) cream / milk
Salt and pepper to taste
1L (4 cups) fresh or frozen corn

Method: Cook bacon in a large pot until crisp, transfer to a plate. Add shrimp to pot and sauté until pink, transfer to a plate. Add onion, celery, bell peppers, and garlic to pot and cook until onions begin to soften. Stir in flour and cook 1-2 minutes. Stir in broth, seasoning and potatoes; bring to a simmer, cover and cook until potatoes are softened. Add cream, corn, bacon, and shrimp back to the pot; season with salt and pepper to taste. Cover and simmer for 5-10 minutes before serving.


Cajun-ish Spice Blend:

30 mL (2 Tbsp) paprika
30 mL (2 Tbsp) garlic powder
30 mL (2 Tbsp) dried oregano
15 mL (1 Tbsp) coarse salt
15 mL (1 Tbsp) onion powder –
optional 10 mL (2 tsp) pepper
10 mL (2 tsp) cayenne

Chicken Noodle Soup

Chicken Noodle soup - you can buy rotisserie chicken already pulled off the chicken at Costco.

Ingredients

1 tablespoon extra virgin olive oil
1 medium onion, chopped
3 carrots, peeled and cut into bite-sized pieces
2 celery ribs, cut into half moons
3 cloves garlic, chopped
1 teaspoon poultry seasoning,
8 cups chicken stock - you must use the Better than Bouillon brand to make this if not homemade
4 cups shredded rotisserie chicken
3 tablespoons fresh chopped dill
2 cups cooked egg noodles sea salt and pepper to taste

Instructions

1. Cook noodles according to the package and set aside.

2. Place a large pot over medium heat and heat olive oil. Add the onion with a fat pinch of salt. Cook for 5 minutes or until onions are fragrant and translucent.

3. Add in garlic, carrots, celery, and poultry seasoning and allow to cook for 5-6 minutes or until the vegetables are softened but not browned.

4. Pour in the chicken stock and season with salt and pepper. Bring everything to a boil and then reduce down to a simmer.

5. Add in shredded chicken and continue to simmer for another ten minutes. Adjust seasonings as needed and finish with fresh chopped dill.

6. You can add the cooked right to the pot before serving or in the bottom of each bowl of you don’t think you will finish all of the soup. If you store the soup with the noodles in it they will get soggy, this is why I prefer to cook them on the side and add them at the end.
