Boneless pork chops

It seems boneless pork chops are almost always on sale but for years I bypassed them. I always found them tough and dry when grilled. A couple of years ago I learned to brine them in seasoned salt and baking powder. Changed my life in terms of grilling habits. A little bit of magic powder + water + 45 minutes and you have a delicious cut of meat off the grill

I prefer boneless, thick cut gets put on the smoker for a while then reverse seared on the griddle. If you’re being quick flatten them with a meat hammer and put them on a good hot grill and they’re great porkchop sandwiches.

In a baking dish, add pork chops over rice and use beef consume instead of water. Add some chopped onions. Delicious.

Buy the whole loin, when on sale, and cut it into pieces and vacuum seal. They will last a long time. When cooking, cook the piece of loin whole. After cooking, place in a small cooler for at least an hour. More is better. These will ensure the moisture stays in and it will be tender.

Molasses holds the juices in for a melt in your mouth chop, just don’t under or over cook them!
