The girl that's hosting dinner is in medicine and found out she's on call on Thanksgiving Day. So instead of having Thanksgiving on Thursday, the plan is to go do dinner at their place on Saturday. At 5pm. ... On Saturday.
...
Freaking historical matchup against Carolina, and our freaking Thanksgiving plans got moved on top of it.
I don't even know what to say to that.

Don't do it. I am completely serious. Don't go, and don't even consider it. Here's why...you only have to give into something like that once and it sets a precedent. A precedent that what they want takes priority over anything you want, and you're willing to give in.
Alternatively, if you say no and tell them why, then that also sets a precedent. A precedent that means they need to consider your schedule before making plans that interrupts something important to you.
So I ask you this...which precedent are you going to set?

If so, you need to tell someone you aren't going to change your plans 3 days from and event for something that may or may not cause a problem.
Tell her you will eat without her if she's called in and save her some leftovers.

Need to be honest with your fiancee now before you go further down the road to marriage. Clemson football Saturday's are sacred!!! My wife knew this from the start (been married 19 years) and plans accordingly!
I'd tell your fiancee you already had plans to attend the game and have already spent money to attend. Simply tell her friend that you have another engagement Saturday and cannot make it that day. Maybe suggest you could attend on Friday or Sunday but Saturday is a no go. If the friend doesn't understand then I'd say she is a friend you can do without....

You had other pans for that day/time. The someone else decided to change their plans to work around their schedule doesn't mean you need to change your plans to fit theirs.
I would have the fiancé go back to the friend and say you "can't make it at 5 but could make it at 3". That way you are telling the fiancé you cre about your fiancé and her friend but there are other things important as well. If the host can't adjust then you send your apologies.

Missed the post where you said the fiancee was pissed too. If she understands both of you need to dip on this invitation.
Here's a little perspective: One of the guys i tailgate with is in the medical profession also and lives in Clemson. He drew the short straw and is on call this weekend. Naturally it is hard to get someone to switch. So, he will be at the game anyway. He comes late and the cops in 13 let him park right at the street because they know his situation. If he gets called during the game he can get to his car and be in in time because there is no traffic.

It's been that way for a while now. Turkey on Thursday. Tailgate on Saturday. Tell them to have fried chicken and beer and serve it in front of the TV. That's what Saturdays in the fall are reserved for ... in my house any way. Perhaps not in others'. Do what you like and carry on.

Always invite people over for Clemson games. It needs to be an event. If you were to tell her that you have family and friends coming over on Saturday you would have an acceptable excuse, even for a non-football person. Clemson football is not just about watching TV, but non-football people don't understand that. If you make it an event then even they will get it.
It may not be too late! Start inviting people over now!

You can plan, cook, and eat dinner between now and Thursday. Invite the other crowd over. Then, show up to their dinner with wine and bourbon, and invite them to join you on the couch after.
