....say, allspice. Don't use the crap that has been in your spice cabinet for 10 yrs...ITS STALE AF! Go get some whole allspice berries from whateva sto sells bulk spices and grind that stuff yerself. Though many jerk recipes don't call for citrus zest....they're lying! Couple a limes, couple a lemons and zest them muthas. I'll usually add lemon/lime juice to make a paste out of it so it will stick to whateva I'ma jerkin'. Mrs. Old Slac doesn't approve of that joke.

If ya got any leftover, freeze it. Use it next time you get a hankerin' for that island taste, mon.
