There's also another way I like to cook them,
Nov 30, 2020, 4:01 PM

don't know what you'd call it.
But essentially, I scramble the egg in a bowl, but when I put it in the pan, I don't stir or move the pan except once, which is to basically flip it over once. Basically cooking the egg like a steak.
It's not an omellete per se. I'm sure that's technically "scrambled", but it's a lot easier to get the eggs on a fork when you can cut it up like a cake than it is to try and stab the little scrambled bits.

I bought some somewhere a few months ago that were perfect, haven’t been able to find any fit to eat since. Unfortunately don’t know the brand.

Gordon Ramsey does a modified version of this
Nov 30, 2020, 5:22 PM
|
|
that my son swears by - he adds cream or milk to the eggs and then takes them off and on the heat constantly while stirring. Ends up with super creamy eggs.
I'm a cast iron egg high heat guy though - mix em in a bowl with salt and pepper, throw em in with butter and cook them fast.
