Do the Coots not count? Or do we have to play one game against the Coots AND another against another in state team?

The OP makes a good argument. Even we had to do what TCU did and go to some places without the promise of a return visit I'd like to see us do it, make a statement, improve our OOC schedule and earn the respect we know we can get.

The SEC, Big 10, or Big 12 have no reason to schedule big games outside their conferences. We will never get respect until we play someone. Just one or two big games a year isn't going to get us anywhere and we are done as soon as we lose one of those. An SEC team loses one game they can get right back in the race.
