dry the outside off real good, get the fire to 250ish, put it in. get it the bird ### to 165. Unless the safe temp is higher than that, I can't recall.

is it a filleted breast? or is it the whole breast sections

with bone in?

I have done the latter...not the former.

For the whole section, I brined mine for 24 hrs. coated it with zattarains I think - basically some sort of chipotle rub b/c that's what I like.

Then a used a drip pan underneath it filled w/ beer to emulate a beer but chicken. Smoked it at 225-240 for however long it took until probe said it was good.

Leave the meat part facing your smoker, not the bones.

It was like butter
