after midnight, but still figured that'd be enough time since it was 14 lbs. instead of the usual 18-21 lb'ers I find at Costco.



Didn't account for the grill not really wanting to keep temp in breezy 30's weather, so it's going slow. And this was a weird batch of cows because the stall temp was a good 10 degrees lower than it usually is--kept waiting for it to get to the 160ish stall, and it was already stalled at 150-152. It got wrapped later than I'd like.

8am or so:



Figured I'd throw some actual burnt ends on the smoke while I'm waiting for this weirdo brisket to get up to temp. They look pretty legit so far.

Looking good so far. Just take what it’s giving you, don’t force your meat. Make sure you wrap it up, and pull it out later to give us a good money shot.
