Only second time ever cooking on a smoker. Ribs were first and came out excellent. I lived in Memphis for four years, and these were about as good as any I’ve had there. I did find a recipe/methodology online from Myron Mixon. Used the rest of that rub on the butt. Let me see if i can find a link.

Wood today is cherry and pecan. Already had cherry from before, and picked up some pecan yesterday. Couldn’t find any apple.

I’ll get some pigs before it’s over.

Pronounced h(upside down e)-low-tis. It’s an offset. I put some pigs up a while back when I got it. The search function should find them super easy.
