It’s a little dry. I’m good with pork. Smoking beef is new to me. Struggling a bit. But I’ll find my way as long as there is cold beer to fuel my drive.

Gotta make sure as much fat is rendered out, so 5 deg Earlier and it may have been chewy. You can keep a lot of moisture in with salt prep and spritz. Nice work bro!
