The beef flavor gets more concentrated. Poor man’s dry age- take out of the shrink wrap, sprinkle of salt, put them on a plate with paper towels above and below, fridge for 24 hours before cooking will dry out the surface a little

vegetable drawer(lower humidity) in the fridge. Not too dangerous from a microbiological perspective and it makes good steak taste WAY mo betta.

One of my marketing classes featured the story of one of the early grocery stores that created a fish display and a butchers corner. They just took the same fish/steak and laid it out on ice/a tray.

microwave on high for 5-6 minutes are the absolute best steaks you have ever had. Get your butcher to get his best cut of meat, then lay them in the microwave and zap them and smother them with catsup.

Wrap the steak in tin foil and put it there for 3-4 days. The temperature you're shooting for is 90*F.


Straight into a frying pan to sear the top and bottom.

Serve and eat.

He takes them out of pack after thawed and dry ages them about 2 days in the fridge. Said it makes them tenderer as well.
