Ever done them ? I have a friend who was telling about this, but I'm all skeptical hippo. Tips tricks, snooty IPA recommendations ?

grill, shallow pan on the grate on the other side. Put ice in the pan, a small grate on top of it, oysters half shell on top of that, close lid. Doesn't take the oyster liquor long to evaporate, when it does...yer done.

I've only done it for holidays when Mrs Old Slac wants to make a smoked oyster roll.

prefer mine raw with some hot sauce and a cold beer. I've smoked cheddar and gouda that turned out well. They do better with a harsher wood like mesquite or else it doesn't impart that much flavor.

It's probably because it would require shucking them raw, which can be done, but a bit of a pain in the dick with SC clusters. You could smoke them until they pop open, like with steam, but they'd be more dried out without steam, and wouldn't get smoke on them until they popped, at which point you're taking them off anyway...so you'd have to pre-shuck them.

I dunno. Sounds good, and also like a lot of work. I know what usually wins in these situations.

Didnt'really taste smokey. Maybe that was just a regular oyster roast, though.


Basically I have nothing to contribute to this thread.

An old timer from work used to eat these in the breakroom every day. It was horrible.

Long run for a short slide. The better use of the grill for oysters is to use the grill to heat them up in lieu of the oven for doing rockerfeller or some other such concoction.

I will say, I’ve made a dip from smoked oysters that’s pretty fuego, but like you said enough time to pick up smoke turns them into shrivelled boogers.

19B is correct - the shucking is the shucking part. But we've had the best success with deeper cup oysters (James River is usually what we get). Also tried them whole as in smoke the whole oyster shell and all and it works. But just get a better smoke flavor when shucked and not on hot side of the smoke.

But PSA - we're probably so drunk by the time we eat these that it wouldn't matter if they got smoke on them or not.
