Are you sure that isn't supposed to be 3 cups rice instead of 3 pounds ( # )? Cooked that would be like 12 cups of cooked rice or 3/4 of a gallon. That's a lot of rice compared to other ingredients.. otherwise looks good.

The key is have plenty of onions boiled with the chicken and mix some wild rice in also.

Here is mine. I do cook it in the crockpot:

1 chicken, quartered, salt and peppered
1 lb country sausage
1 onion, minced
3 stalks celery, minced
4 cloves garlic, smashed
12 oz beer
1 bay leaf
2 tbs Cajun blackening seasoning
enough water to cover
2 cups rice

Brown sausage in iron skillet. Remove to crockpot. Brown chicken in skillet. Add oil if needed. Remove to crockpot. Add onion, celery, and garlic to skillet. Cook until onions become translucent. Deglaze skillet with beer. Add everything to crock pot except rice. Cook 4 hours. Add rice, cook 1 more hour or until rice is tender and has sucked up most of the liquid. Add salt and pepper to taste.

That feeds about 8 people. You can remove the bones if you want before serving. Double up if necessary.

INGREDIENTS:
4 quarts (16 cups) water approx. (enough to cover chicken)
4 lb. (approx.) whole chicken
3-4 stalks celery; rough chopped
1 large sweet onion; diced
1 teaspoon pepper – divided
1 teaspoon salt – divided
1/2 teaspoon oregano
1/2 teaspoon celery salt
1 1/2 teaspoons parsley – divided
3 cups long grain white rice
DIRECTIONS:
In a large stock pot bring water, chicken, celery, onion, 1/2 teaspoon pepper, 1/2 teaspoon salt, oregano, celery salt, 1 teaspoon parsley to boil, cover and reduce to a simmer for at least 1 hour (2-3 hours would be even better).
Once simmering is complete, remove chicken to cool in order to debone. Let broth continue to simmer and reduce.
When cool enough to handle, debone chicken.
Remove all broth from pot (or use another pot) and put approximately 6 cups broth back into pot along with the rice, chicken, remaining pepper, salt and parsley. Cover and simmer for 15 minutes.
After 15 minutes stir in another cup of broth. Cover and simmer for 5 minutes.
Continue to add broth, stir, cover and simmer for 5 minutes at a time until rice is done.
Salt and pepper to taste.

Man, all these fancy recipes for chicken bog

Nov 21, 2017, 6:29 PM

Me

Boil 8-12 thighs bone in, bones add to the flavor of the stock. I like skin on for more flavor to stock as well

Remove thighs, let cool, and take meat off

Add chicken and 2-3 lbs smoked sausage depending in how much you like sausage to stock

Add a few cubes of chicken bouillon

Add onions, celery and bell pepper if you like

Add enough rice to soak up all the stock

I make huge batches and freeze it. Will fees 10-15. Sorry I can't tell you how much water but I just eyeball it. It's darn tasty though. Just put some in the freezer a few minutes ago
