When having BBQ on football game day

I don’t see the appeal of mustard based bbq sauce. It seems like it’s the leftover bottle after all the good sauces are gone.

Agreed it's fantastic on grilled chicken. The red BBQ sauce is just elevated ketchup IMO.

Sort of like Jesus bringing out the best wine at end of wedding. And I can’t figure out why but love it. Duke’s hash over rice with little bit mustard barbecue sauce. Great eating.

I say that tongue-in-cheek because my current favorite local Q is a whole hog, peppery vinegar baste. They offer sweet and hot sauces, but I go there because the Q is moist and tastes like it just came off the smoker. There is no sauce that tastes better than that Q, IMO. Sauce is an easy way to disguise dry or mediocre Q.

live in the midlands of SC? If you lived in the Lowcountry you’d be exposed to (and maybe even enjoy!) mustard based BBQ - like Swearmans, Bessingers, Dukes, Melvins, etc. I’ll admit it is a somewhat acquired taste -and it helps if you’ve got some German heritage. Germans love their mustards!
And I LOVE people that don’t like hash- just means more for me!
I’d be willing to bet you’ve not partaken of upstate SC BBQ harsh - not the watery red junk they try to pass off as “hash.” Don’t get me started on true hash vs. Brunswick Stew!
Having grown up in Greenwood SC, I was exposed at an early age to “Greenwood style” BBQ hash. If you’ve ever been fortunate enough to try it, it will ruin you for every other hash much less Brunswick Stew.
In the 50s and 60s there were numerous small “Hash Houses” in and around Greenwood - especially in the mill villages. They were all very good because all they sold was hash and you got it with rice or bread.
When I moved to the Lowcounty in the 70s I loved the fresh local seafood but could not believe what they called BBQ hash. A watery concoction with more of a gravy consistency than that meaty hash from Greenwood.
The good thing was that it forced me to search for recipes to make my own. Below is the closest I found. I’ve cut it down to where I can use an 8 pound Boston butt in a large crock pot and after 14 hours I have a hash that’s close to that of my youth!
UPSTATE SC GREENWOOD FIREHOUSE BBQ HASH 25 pounds pork (no bones) 25 pounds beef (no bones) 10 lbs. baking potatoes 10 lbs. onions 1 pt. vinegar 1 pt. mustard 6 oz. Texas Pete 6 oz. Worcestershire sauce Salt and pepper to taste 1 1/4 lbs butter (not margarine)
Cover meat good with water. (We normally do this in a large 80 gallon black cast iron pot.) Stir meat with a boat paddle to remove any fat or skin. When meat is done and begins to come apart, you then add the cut up onions and potatoes. Add your seasonings and butter. Keep stirring to keep meat from sticking. When it has cooked down to the consistency you like, it's done.
Firehouses made this hash in huge black cast iron wash tubs, cooked slow all night, stirred with a boat paddle and sold on holidays as a great fund raiser.
GO TIGERS!

Kelley's BBQ just outside Greenwood still has hash but it is only available on certain holiday weekends for pick up. And you better get there early on Thursday - you might be disappointed on Friday because it will sell out.

BBQ is South Carolina and South Carolina is BBQ. You can get in your truck and drive in any direction 30 miles and you will find all kinds of BBQ, sauces, and hash or no hash. Everybody swears theirs is the best and to them it is. I never met a BBQ that I did not like, I just like some better than others.

I make a mustard and vinegar sauce. Tomato based is OK every once in a while, but I prefer the mustard/vinegar 95% of the time.

Growing up in the rural lowcountry of SC, mustard based BBQ sauce was all that was ever used for pulled pork. Sometimes used the red sauce for ribs or chicken but pulled pork always has been, and always will be mustard based for me. There was a family owned place on Johns Island called Rast Family BBQ. Best sandwiches ever. Bessinger’s on Savannah Highway in West Ashley was another favorite. When I lived out of state I would always go to Bessingers for the buffet when I was home visiting family. Maurice’s and Melvin’s are all descendants of Bessingers.

You don't have to eat the hash if you don't like it, but don't diss it. The Dukes name is to BBQ as white is to rice. I was born in the lower part of Bamberg County in 1945. One of my good memories is loading up in our 40 Chevy and heading over to Cope, SC to Eat BBQ at Danny Dukes place. As I remember It was about $1 for all you could eat. Danny was the first Dukes to enter into the world of BBQ.
Then there was Earl Dukes of Orangeburg and Cameron. Dukes style BBQ spread all over the low country and early on practically every small town had their version of Dukes BBQ. They were all loosely connected but not a franchise. The all used a sauce made out of mayo or salad dressing, mustard, ketchup and sugar. Each place varied and adapted their sauce and hash to their taste. They were all alike but yet not just alike.
So every time you eat at Dukes BBQ you are chowing down on a piece of history.
BTW I am not related to the Dukes family.

You’ve brought back some memories, as I’m from Cope! Still have family there, although I’m now in Spartanburg. I fondly recall Duke’s in Cope as well as in Cameron and Orangeburg. We usually eat at Antley’s while there, and may do so today as we’re visiting family.
Thanks for the memories!

That’s my Dad’s favorite because it reminds him of the one that used to be in Cope. I like it, too, but the wife prefers Antley’s and we usually go there.
I can remember Earl Dukes leaning back in a folding chair at his place in Cameron. That was a good rendition, too.

NE SC and NC pepper/vinegar sauces are my preference. Some other red type or bourbon sauces are good, especially on brisket. Mustard base is good on chicken.
I don't know about pork BBQ in Texas, but my cousin in cooked us brisket when out there for a family funeral in October. He froze me one and I bought a $7 Goodwill suitcase and some ice packs and flew it back to SC. Took half to the UNC game and had the rest while watching the Gator Bowl! It was great! He sent some sauce and it was a red but more of a pepper/vinegar!

I’m okay with mustard base but KC is my favorite. I always make my own rubs and sauces. I’ve started smoking my brisket and ribs the night before so that they come off around 8am. I make a faux cambro (cooler insulated with towels) to keep the meats hot until we’re ready to eat. I used to just get smoking pig bbq but I like mine better. It’s not $21 a pound for brisket when I smoke it. I smoke a full packer brisket around 15-20 lbs and share with my lot 5 neighbors.

It all depends on where you were raised in SC if you were so lucky. Our BBQ sauces are diverse.

We recently moved to Hartsville which is vinegar pepper based. Fortunately it suits my tastes. Mrs TH76, not so much.

I noticed Food Lion is carrying Lee's BBQ (Greenwood) Hash and Dowd's (Newberry) Hash. First time I tried Dowd's and it had a more mustard taste to me. Wasn't bad though.

You are right the Newberry area tends to use a more traditional mustard sauce, with very little sugar if any.

It's good. They have been carrying it at the Greenwood county Food Lion stores in the meat dept in the small and larger cups. My family likes Hash over rice but I prefer it over a piece of toast. Yum!
